Why eat halal ?
Halal is the good and the pure. It helps purify the hearts, and the Prophet ﷺ linked lawful food to the acceptance of supplications.
Allah is Pure and accepts only that which is pure
“O people, Allah is Pure and accepts only that which is pure.”
He commanded the believers to do what He commanded His Messengers, and He said: “O Messengers! Eat of the good things and do righteous deeds” (Surah 23, Al-Mu'minun, verse 51), and also: “O you who believe! Eat of the good things that We have provided for you.” (Surah 2, Al-Baqarah, verse 172)
The Prophet ﷺ then mentioned a man who has traveled far, disheveled and dusty, raising his hands to the sky and saying: “O Lord, O Lord!”, while his food is unlawful, his drink is unlawful, his clothing is unlawful, and he has been nourished with the unlawful. How could he be answered?
“The lawful is clear and the unlawful is clear. Between them are doubtful matters that few people know. Whoever avoids the doubtful matters has protected his religion and his honor. And whoever falls into them falls into the unlawful, like a shepherd who grazes his flock around a private pasture and is about to let them graze in it. Know that every king has a private pasture, and that Allah's private pasture is His prohibitions.
Indeed, in the body there is a piece of flesh which, if it is sound, the whole body is sound, and if it is corrupt, the whole body is corrupt. Know that it is the heart.”

Eating lawful food is a command addressed to the Messengers as well as to the believers.

What we eat nourishes the body and the heart: the purity of one depends on that of the other.
